Saint Agur is a French blue cheese produced at the historic Fromagerie de la Vallée de l'Ance, located in the Monts du Velay, in the heart of the Auvergne region. This cheese stands out for its unique aging process, which lasts ten weeks in cellars with carefully controlled temperature and humidity conditions. The slow maturation gives Saint Agur its characteristic ivory color and blue veins, while its fruity taste and creamy texture make it particularly appreciated.
The salting process is done manually at the Beauzac dairy, ensuring artisanal quality and an authentic taste.
