Indicative Recipe:

Pre-dough:

  • Ingredients:
    • Scrocchiarella Mix: 1000 g
    • Water: 600 g
    • Instant Dry Yeast (20 g if fresh): 10 g
  • Procedure:
    Mix all ingredients for 4 minutes at low speed. Let the dough rest covered for 16-24 hours at 4°C in the fridge.

Dough:

  • Ingredients:
    • Pre-dough: 1610 g
    • Scrocchiarella Mix: 1000 g
    • Water: 900 g
    • Salt: 60 g
    • Extra Virgin Olive Oil: 40 g
    • Instant Dry Yeast (10 g if fresh): 5 g
  • Procedure:
    Mix pre-dough with Scrocchiarella, yeast, and 500 g of water for 4 minutes at low speed. Add salt, then increase speed. After a minute, add olive oil and continue kneading for 10 minutes, adding the remaining water gradually. Let the dough rest for 40 minutes, then divide into desired portions. Let it rest at room temperature for 3 hours before shaping, garnishing, and baking at 300°C on a stone oven.
